Ginger Glazed Mahi Mahi

"This Ginger Glazed Mahi Mahi is bursting with flavor and combines both sweet and sour taste sensations. The 30 minute prep time includes 20 minutes to marinate. This recipe is a snap and so delicious. You'll love it!"

3 tablespoons honey
3 tablespoons soy sauce
3 tablespoons balsamic vinegar
1 teaspoon grated fresh ginger root
1 clove garlic, crushed or to taste
2 teaspoons olive oil
4 (6 ounce) mahi mahi fillets
salt and pepper to taste
1 tablespoon vegetable oil

Cara-cara
  • In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  • Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  • Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.

White Sauce for Fish

1/2 cup plain yogurt

1/2 cup mayonnaise

1 lime, juiced

1 jalapeno pepper, minced

1 teaspoon minced capers

1/2 teaspoon dried oregano

1/2 teaspoon ground cumin

1/2 teaspoon dried dill weed

1 teaspoon ground cayenne pepper

To make white sauce: In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.

Grilled Cilantro Salmon

2 cloves garlic, chopped
2 cups honey
juice from one lime
4 salmon steaks
salt and pepper to taste
1 bunch cilantro leaves, chopped

How to
  • In a small saucepan over medium-low heat, stir together cilantro, garlic, honey, and lime juice. Heat until the honey is easily stirred, about 5 minutes. Remove from heat, and let cool slightly.
  • Place salmon steaks in a baking dish, and season with salt and pepper. Pour marinade over salmon, cover, and refrigerate 10 minutes.
  • Preheat an outdoor grill for high heat.
  • Lightly oil grill grate. Place salmon steaks on grill, cook 5 minutes on each side, or until fish is easily flaked with a fork.

Grilled Salmon

1 1/2 pounds salmon fillets
lemon pepper to taste
garlic powder to taste
salt to taste
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

How to

  • Season salmon fillets with lemon pepper, garlic powder, and salt.
  • In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
  • Preheat grill for medium heat.
  • Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

Salmon with Dill

Before this, I've never liked salmon, as the salmon I had was poached Salmon at Ikea. But since starting with this NEW healthy diet, I tried to eat as much fish that I can. So I varies my choice of fish. Consuming salmon is considered to be reasonably healthy due to the fish's high protein and low fat levels and its high Omega-3 fatty acids content.

I tried this recipe from allrecipes.com and followed some suggestions from reviewers, it turned out Very nice! I had it with a plate of steamed veges (cauliflower, broccoli and baby carrots). Never thought baked fish and steamed veges would be YUMMY! :)

1 pound salmon fillets or steaks
1/4 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon dried dill weed - i used fresh dill
juice from one lemon
tablespoons butter
if preferred add 1 teaspoon dried basil and 1 tablespoon fresh parsley

How to
  • Put the salmon in a foil packet with chopped up onion, a dab of butter, drizzle of olive oil, and the quartered lemon I used for juice. I added basil and parsley.
  • Bake in preheated oven for 10 to 15 minutes. cook ONLY till opaque.Salmon is done when it flakes easily with a fork.
Sauce
Try sour cream/mayo half and half plus fresh dill.

Side vege
Great with green peas cooked with olive oil, onion, and garlic and baked sweet potato cubes.
